Tips for making Soft and Puffy Chapatis :)

R ur Chapatis going bad? – Do ur friends have to use a tool to break em up? 😛 do they tease u for making Frisbee? Well this is just the blog for you. As a budding cook, you will need these tips for making soft and mouth watering Chapatis.

  1. The aata must be Imported Indian or a pakka Indian local brand
  2. While mixing the dough, dont pour water all at the first time and start mixing. Put water little by little and mix till you get a smooth non stick texture. Hot water is much better
  3. Add a bit of oil/ghee/butter while mixing – it makes the texture better.
  4. After mixing the dough, cover it with a wet cloth and let it for 10-15 mins.
  5. Do not use too much flour when rolling – it makes the chapatis hard.
  6. Roll evenly – dont roll too thin else they wont puff
  7. Heat the pan/tawa nicely before putting on the chapatis (this is especially for the first chapati – if the pan is not heated ur first chapati will bake slowly and will definitely be a Frisbee)
  8. Use a bit of oil while baking, turn up and down frequently, use a flat spatula to press the chapati slowly as it starts puffing so that the steam circulates everywhere inside.
  9. Last and most important – after baking, keep the chapatis in a closed container, the steam inside the vessel helps to keep them soft for a long time, at least 1-2 hours.
